Honey Crisp Apple Pie with Stunning Red Walnuts from Nibble & Thrive ~ Cheri Burns

Ingredients:

Spectacular Garnish and/or Filling featuring: Red or Chandler Walnuts

Crust:

  • 2 cups all-purpose flour

  • 1 cup shortening

  • 1 teaspoon salt

  • 1/2 cup ice cold water

  • At least 1/4 cup Red or Chandler walnuts or 1/2 cup if using in filling

Filling:

  • 7 Honey Crisp or Granny Smith apples

  • 1 tablespoon lemon juice

  • 2 tablespoons cornstarch (instead of flour)

  • 1 teaspoon ground cinnamon

  • Dash of nutmeg

  • 3 pats of butter

    Egg Wash:
    • 1 large egg

    • Splash of water

    Instructions:

    Getting Started:

    1. Preheat oven to 400°F (note temperature decrease during cooking below)

    Filling:

    1. Peel, core, and slice apples into 1/2" slices.
    2. Toss apples with lemon juice in a bowl.
    3. In a separate bowl, combine corn starch, cinnamon, and nutmeg.
    4. Add the dry ingredients to the apples and toss to coat.
    5. Nut lovers can add 1/2 cup nuts to the filling as well!

    Crust:

    1. Mix gluten-free flour and salt in a bowl.
    2. Cut in vegan butter or vegetable shortening until it resembles small pebbles.
    3. Add ice cold water --this is key!--and mix gently.
    4. Wrap the dough and chill.

     Assembly:

    1. Roll out half of the dough on a lightly floured surface.
    2. Carefully line a deep dish pie pan with the crust.
    3. Fill with apple mixture and dot with vegan butter.
    4. Roll out the remaining dough and lay it over the apples.
    5. Seal the edges with a crimped pattern.
    6. Prepare the egg wash by mixing the egg with a splash of water.
    7. Brush the egg wash over the top crust.
    8. Skip the sugar.
    9. Cut narrow strips of aluminum foil and cover the crimped edges to prevent burning.
    10. Place the pie on a foil-lined cookie sheet.

    Baking:

    1. Bake at 400°F for 25 minutes.
    2. Reduce heat to 375°F and continue baking for 30-35 minutes, or until the crust is golden brown.

    Serving:

    1. Garnish with **Red or Chandler walnuts** while warm for that extra special touch!

    2. Let the pie cool completely.

    3. Can be served with rice cream, real whipped cream or a dairy-free alternative.

    * Notes for Vegan Gluten-free, Egg-free, Dairy-free alternatives:

    Cheri uses traditional ingredients and though there is no substitute for her crust, she has used a gf pie crust alternative with her delicious filling and red walnuts for gf family members. You can choose to experiment with alternatives to meet your dietary needs.

    • For a vegan crust: vegan butter or vegetable shortening that is suitable for baking.

    • For dairy-free: vegan butter and serve with dairy-free ice cream or whipped cream-there are good ones out there!

    • For a gluten-free: gluten-free flour blend

    • For egg-free wash on crust: you can try using coconut oil, vegan butter, flax egg, etc.

    • For a bit of sweetness without sugar: add a small amount of stevia, date or monk fruit extract to the filling.

    • For corn starch: substitute with arrowroot accordingly
