Honey Crisp Apple Pie with Stunning Red Walnuts from Nibble & Thrive ~ Cheri Burns

Ingredients:

Crust:

2 cups all-purpose flour

1 cup shortening
-
1 teaspoon salt
-
1/2 cup ice cold water
- At least 1/4 cup Red or Chandler walnuts or 1/2 cup if using in filling
Filling:

7 Honey Crisp or Granny Smith apples

1 tablespoon lemon juice
-
2 tablespoons cornstarch (instead of flour)
-
1 teaspoon ground cinnamon
-
Dash of nutmeg
-
3 pats of butter
-
1 large egg
-
Splash of water
Instructions:
Getting Started:
- Preheat oven to 400°F (note temperature decrease during cooking below)
Filling:
- Peel, core, and slice apples into 1/2" slices.
- Toss apples with lemon juice in a bowl.
- In a separate bowl, combine corn starch, cinnamon, and nutmeg.
- Add the dry ingredients to the apples and toss to coat.
- Nut lovers can add 1/2 cup nuts to the filling as well!
Crust:
- Mix gluten-free flour and salt in a bowl.
- Cut in vegan butter or vegetable shortening until it resembles small pebbles.
- Add ice cold water --this is key!--and mix gently.
- Wrap the dough and chill.
Assembly:
- Roll out half of the dough on a lightly floured surface.
- Carefully line a deep dish pie pan with the crust.
- Fill with apple mixture and dot with vegan butter.
- Roll out the remaining dough and lay it over the apples.
- Seal the edges with a crimped pattern.
- Prepare the egg wash by mixing the egg with a splash of water.
- Brush the egg wash over the top crust.
- Skip the sugar.
- Cut narrow strips of aluminum foil and cover the crimped edges to prevent burning.
- Place the pie on a foil-lined cookie sheet.
Baking:
- Bake at 400°F for 25 minutes.
- Reduce heat to 375°F and continue baking for 30-35 minutes, or until the crust is golden brown.
Serving:

Garnish with **Red or Chandler walnuts** while warm for that extra special touch!

Let the pie cool completely.

Can be served with rice cream, real whipped cream or a dairy-free alternative.
